I often brush on ranch or ceasar dressing and roll in bread crumbs before baking. I also mix various spices ( or sometimes jerk seasoning or curry powder) into plain yoghurt and marinate the chicken before rolling in crumbs.
For keto, roll in crushed pork rinds. If using yoghurt, shake off the excess before rolling in the crumbs and bake no higher than 325 degrees. High heat will make the yoghurt break down. Okay, now I'm hungry.
