I finished t-shirt quilts for 3 grandkids last year. I think pieced t-shirt backing would be difficult to keep aligned. Once finished I had them long armed by someone who knows what she is doing. There is a lot of sentiment in each quilt. I like to use sashing to frame the shirts.
