interesting question. weaving uses two or more threads/fibers meshed/woven together to form a new surface/fabric. Stitching is using thread or fiber, to hold fabrics together by piercing the layered fabrics with the thread/stitching fiber. Stitching can also be used on fabric to add embellishment or texture, again by piercing the fabric more than one simultaneously, to connect one fabric to another. There is an aspect of stitching that might be considered weaving since the interaction of the top and bobbin threads causes the two of them to be woven together - however, they don't form their own fabric, they are used to connect layers of fabric.
