I do intricate backs a lot (though this one takes the cake), and my method is to lightly baste the top and batting, flip them and then mark on the batting where the center/edges/whatever on the top is so I can match the back to it. Take the top off the sandwich and repeat marking method with the back, and then do a proper pin-basting using the marked batting to get everything lined up right.

For the scalloped edges I just made the back a big square and trimmed it back after quilting. And it's hand quilted rather than machine. The one issue is it's not properly bound. I ran out of fabric trying to figure out how to cover those angles, so I just sewed the edges together like a pillowcase and did a blanket stitch over the lot. It'll be interesting to see how well it holds up.
