Caprese Zoodles
I found a new refreshing summer salad recipe that I liked:
Yield: 4
4 large Zucchini
2 tablespoons Extra-Virgin Olive Oil
Salt and Pepper
2 cups Cherry Tomatoes, halved
1 cup Mozzarella Balls, quartered if large
1/4 cup Fresh Basil Leaves
2 tablespoons Balsamic Vinegar
Using a spiralizer, create zoodles out of zucchini.
Add zoodles to a large bowl, toss with olive oil. Let marinate for 15 minutes. Drain liquid.
Season with salt and pepper. Add tomatoes, mozzarella, basil, and toss until combined.
Drizzle with balsamic vinegar and serve.
