I know a lot of you are trying to use up your zucchini. Here is a link to a you tube I follow & she had some really, really good looking cookies on it today. You could even shred up & freeze your zucchini in 1 1/2 cup bags to make these in the fall & winter time when your crop is finished producing. I've not tried these yet but would love a review if someone decides to make these soon.
