Brussels Sprout Salad
This fits my search for low carb sides.
Dressing - combine & shake in pint jar with a lid.
1/2 cup olive oil
1/4 cup lemon juice
2 Tblsp Dijon mustard
1 Tblsp honey
Salt & fresh ground pepper to taste
Mix in large bowl then toss with dressing:
1/4 cup chopped fresh parsley
2# Brussels Sprouts trimmed & shaved by food processor
The following should be added just before serving:
1 cup craisins
1 cup shredded cheddar cheese
1/2 cup toasted sliced almonds
