Gee Tranum, we must be thinking along the same lines. Yesterday I made an eclair cake for dh & I. With the cooler weather here in mid Tennessee I wanted to have a 'taste of spring'. Sure did hit the spot last night!
My mom used to make Ambrosia for events. A can of fruit cocktail, some shredded coconut & mixed with real fluffy whipped cream. Mind you- the real stuff, not the canned or frozen.
