Roasted Cherries
I love cherries and always buy them when they come in season. They're expensive, but what a treat. I bought some a couple of weeks ago and the DH and I were so disappointed. The cherries tasted blah...no flavor at all. I was about to throw them out when I came across a recipe for "Roasted Cherries." I gave it a try with these not so great cherries and voila! Yummy! I don't have exact, ingredient amounts, but it's pretty easy to make and adjust to your taste.
I had about 1/2 lb of cherries that I emptied into a pyrex 9x11 casserole dish.
Baked them until they were shriveled and about 2/3 their normal size...40minutes???
Drizzled them with just a little Balsamic Vinegar that a friend gave me
Added just a tiny drizzle of honey.
That's it! They taste great on yogurt, or ice cream, or over oatmeal.
