Default Spicy, Corn, Potato, Leek Chowder

I made this up this morning for a "dinner for breakfast" meal. So good!

I know that a lot of you use the Better Than Bouillon concentrated stocks. Did you know that they came out with a whole bunch of "gourmet" flavors? I bought the "Adobo" flavor a few months back and forgot all about it. I found it in my pantry this morning, so I thought I'd open it up and try it in this chowder. Yummmmm!

2 T butter
1 C any kind of meat, Sausage, etc., cubed
2 potatoes, cubed
3 ears of fresh corn cut off the cob
1 leek, white part only sliced thin
S&P to taste
2 medium tomatoes, roughly chopped
4 C water
1 T Better Than Bouillon Adobo Flavor
chopped cilantro and oregano to taste

Melt the butter in a large pan, or pot
add potatoes, corn, leek and season with salt and pepper
brown the ingredients in the butter
add the tomatoes, water, BTB and simmer for a few minutes
top with chopped cilantro and oregano
serve with hot tortillas.
