Yes, I have made several quilts using that method. I cut lots of strips to size and make a couple of blocks whenever I needed to refresh my mind with a different project. You can make the blocks larger if you wish. Two of the ones I made I chose a color way and dove into my scraps and stash to make the blocks. I did keep a consistent center, but that was my choice and need to have some order to my scrappniness.

You might want to consider strip piecing and make perhaps 10 blocks at a time. Just a thought. Good luck, I have seen very few potato chip quilts that I did not like.
