Default Using Lemon Balm In Cooking

Lemon Balm is a citrusy, slightly minty herb that grows readily in my rose garden. (I'll bet that a lot of you have it growing too.) Occasionally, in the summer, I'll pick some and make an iced tea out of it, but that's about all I've ever used it for. I started thinking about what other culinary uses it might have, so I began researching online. My first thought was to use Lemon Balm for a Chimichuri type of sauce, or maybe add it to my Ginger Bug for a lemony flavoring. What if it were mixed with a chili sauce, or another Asian condiment like Oyster Sauce? My researching turned up a pesto recipe.
