The biggest hit of the "sides" I make are simple roasted squash and baked sweet potatoes. Yep plain. I just quarter the squash (anykind), seed it, wrap in foil, and bake it at whatever the meat is roasting at. Same with the sweet potatoes Just wrap in foil. I have even just run my extra squash over to my neighbor who sticks a little butter on it and eats it as a snack.
