Thanks, I agree, but they have accepted my cream cheese entries in the past, so I'm not too worried. They taste the cakes the evening that they are delivered, so I'm not too worried about anyone getting sick. The cream cheese frosting also holds up better during the fair than other frostings. I might reconsider and go with a stiff buttercream...we'll see.
