I can understand cutting for say, 5 blocks, making them, then going on to the next 5, but cutting everything first would have that puppy in the UFO box before it was half done in my sewing room!
I don't cut all the fabric at one time either. I find it too boring to just stand and cut and then just sit and sew. I do a bit of each. It keeps my brain engaged and my body is happier if I move around more. Plus, as you say, if you make a mistake you will (hopefully) be able to recut.
