I bet it smelled amazing while baking. Did you use frozen grated coconut? I've never heard of it.
While I love carrot cake with cream cheese frosting, DH is lactose intolerant and I've not found a vegan option that I like. I'm wondering if the spices of the cake and the sugar might make it good in this recipe, though. Hmmm... I think I'm going to have to give it a try.
