I think my favorite Christmas cookies are the plain vanilla cutout sugar cookies, with frosting. They always taste like Christmas to me.
Mom used to make rum balls, which as I recall, were nothing more than crushed up vanilla wafers, then some dry cocoa and rum added. Then they get rolled into little balls and rolled in white sugar. NOT baked, so the rum is real, not cooked away. You get a little "warm fuzzy" feeling with every one! HA.
I miss helping Mom bake Christmas cookies. She also had one favorite she got off the corn flakes box. They were coated with corn flakes and then flattened before baking. When they came out of the oven hot, she pressed a sliver of dried cherry on top. She also made the best peanut butter cookies... like shortbread! As an adult I tried to make her recipe and couldn't get past the fact that they were all peanut butter and crisco! Ugh, so I don't make them. I loved them when I didn't know what was in them!
That's true of a lot of things, like scones....

Anyone making toffee?
