I love sweet potatoes too. My two favorite "fixes" after baked and buttered are below.
Peal, slice into one inch cubes. Toss in a little olive oil and roast in a covered fry pan. About 10 minutes will be ready to eat. Top with a little feta cheese and a light dust of cinnamon if desired. Ta-Da a yummy side that is healthy and tasty.
Some times I will peal and slice thin, (1/4 to 1/8 inch thick) toss in a fry pan lightly coated with olive oil and create sweet potato "chips" or discs. They cook quickly and in a blink will be too brown because of the natural sugar in the orange spuds, so watch carefully and turn once.
