I'd never ate sweet potatoes until I moved to Iowa and my sister introduced them to me. I use them like I do my baked potatoes, lathered in butter, some sort of meat, loaded with shredded cheese, nuked until the cheese is bubbly, then add sour cream and chopped green onions. I've never cared for sweet potato casserole where you add marshmellows, that just masked the potato to me plus I'm not much on sweet things anyway. I'll also throw in some sweet potatoes when I make my butternut squash soup as I add a lot of various veggies from the freezer to use them up, all mostly from the garden season.
