We had fried salmon last week. I get Ground Lupine, first found it at Costco and now buy direct. As a breading, it has a cornmeal type texture. Not a lot of flavor, but very keto friendly. So did a simple egg/milk wash, seasoned the ground lupine with some Italian Spice Mix and Lemon Pepper, comes out nice and crisp and a different texture than we usually have.

I usually "oil poach" fish. Basically use quite a lot of oil (olive for me, for flavor), but do not have the heat high. Cook gently

Here's a Martha Stewart link if it is a new technique.

We have guacamole on hand pretty much all the time and have pretty much eaten it with everything -- here's a good keto tip, when you eat guacamole with your pork rinds, together they fill in each others lacks to make a more complete protein.
