One of the things I got out of the freezer the other day was some bulk sausage we get from the local butcher down the way. Hubby found the concept of "keto pizza" on-line, is pretty decadent. You make the crust from the sausage - just smoosh it down, and precook most of the way ( I use rectangular restaurant style pans and line with parchment paper, bake in oven). Drain the fat and then top with whatever toppings you want. Then, back in the oven just enough to melt the cheese/heat through. We will use a tiny bit of Rao's and have a package of marked down fresh mozzarella. You can add vegies or whatever, but you might want to pre-cook them a little.

Made the crust yesterday, so the pizza will be after bowling date. Apparently we have been getting lucky on our day/time of going to Costco, midweek, right at opening. We are fairly often getting (or sometimes just missed) some meat specials. That's how the leg of lamb got in the freezer, was already a pretty reasonable price but then something like $10 off at the register. This past week there were lamb loin chops -- the type with more than a bite on the rib bone. Again, price was pretty reasonable to start and with discount brought it down to like $3.99/lb.

When I first met the hubby some 20+ years ago, he was what I considered a pretty picky eater. With his changes in diet he has gotten more restricted in some ways, and way less fussy in others, especially when considering things like organ meats and different animals. First time I cooked lamb (grilled over charcoal Greek style) he was rather dubious and asked if it was supposed to taste like that?? Now it is a favorite.
