I tried this whipped cottage cheese dessert the other day. It's not bad!
Ingredients
2 cups cottage cheese
!/3 cup sugar or sugar substitute equivalent
1 teaspoon vanilla
4 graham cracker sheets crushed (I used granola)
2 cups fresh berries
Instructions
Add cottage cheese, sugar or substitute and vanilla to food processor and blend until smooth. Scoop 1 heaping tablespoon of graham crackers into each of 6 small glasses. Divide the whipped cottage cheese mixture evenly in the glasses. Top with berries. Refrigerate at least 4 hours to set up. Serve with a dollop of whipped topping if desired.
