@thimblebug6000 and @ElaineCovid ... that recipe does look good. If you don't want the "red" from the vinegar, you might want to use a white wine vinegar.

There's some good looking recipes with lemon or lime juice, honey and oil. I'm not linking to any, being that I have not tried them, but am intrigued. If anyone does give one a try, please share your review.

Also, have been thinking about your comment about no trace of oil. I'm thinking if the proportions were right, and the dressing/marinade was drained before serving, you might not notice the oil. IOW don't shy away from "with oil" recipes!
