Fried potatoes
On the farm, we had potatoes and gravy many times at noon. Mother purposely boiled extra potatoes because supper was leftovers from noon and she sliced and fried the cold potatoes. I love fried potatoes but mine never tasted as good as hers.
Today a light bulb went on ! I mixed cold sliced potatoes, thin slices of onion, salt and pepper in a bowl then drizzled on olive oil (or melted butter) and dumped this on the grill for frying. Worked so much better than heating oil in a pan and adding potatoes.
I like having cold cooked potatoes in the refrigerator. And hard cooked eggs too. Creamed potatoes, fried potatoes or potato salad. Egg salad sandwiches. You can’t go wrong !
