There was a manager's special on pork belly at Costco. I make something pretty close to this, but I'm following an actual recipe which is unusual for me. I had gotten whole Star Anise with my prime day spice buys, and husband had already gotten some of the szechuan pepper back in Grand Rapids before his momma passed, and everything else we had.

When husband first started going Keto, he wasn't such a fan of pork belly. Didn't like the fattiness, didn't like anything cooked glutinous or slurpy, no braised pork belly for him. He did like pork belly cut into pretty small cubes, seasoned, and cooked on high until it is crispy. Is a mouth burning wonderful way to cook pork belly, but easy to eat too much. He has learned to appreciate the soft cooked braised versions like this one.
