I'm not overly fussed about thread color when piecing. Rarely do stitches show. Given 2 choices, light or dark, I'd always go for the light. Dark may show through fabric. If, for some reason, a stitch or two show up on dark fabric, I can always touch them up with a micron or other permanent pen, right?
I've done that for sure. In fact, we were reupholstering my husband's 65 Mustang's seat back in the day. The vinyl ripped a bit when we were stretching it over the foam and the white foam showed thru the red vinyl just a bit. My husband was fussing about it so I said "Hang on. I can fix that". I went and got my red sharpie and colored the little bit of foam red. It didn't show at all! My husband was really happy.
