Wondering how fatty the boston butt is? I've seen people cook with it and I'd be tempted to make it ahead and skim fat. Is that a thing?
Similar beef Instant Pot recipe. I cut as much fat as I can out of the chuck roast ahead of time. It still is moist and flavorful. I also use the 100 minutes for any kind of big beef recipe in Instant Pot. This always comes out great. Can also call it pot roast and skip the sandwich part.
