I had the most amazing dinner last night. Hubby and I went for a date night to a local Mexican place, El Gallo in East Peoria. Regional Mexican food is so interesting, not just from the different regions of Mexico, but from the different interpretations that become localized in the US. Anyway, I had "molcajete" which is brand new to me but is apparently fairly common in this area. Sort of like fajitas but in a (heated) stone bowl and with nopales. Yes, it was much more than I could eat, the portion was very generous. Hubby was able to help, his choice was shrimp diablo, and without the rice and beans (his keto diet), he could use some extras. Plus, we took quite a bit home which will be my lunch today.
