Pulled some chili out of the freezer. Added some finely chopped onion, pureed mushrooms and jalapenos and tossed the whole thing into the toaster oven to thaw and heat. Will top with diced fresh tomatoes and shredded cheese and serve with whole wheat rolls.
Every couple of months, I make a triple batch of chili and freeze in single serve portions. I love having a go-to on those nights where I am too physically and/or mentally tired to plan and cook a meal. DH loves having a no-brainer supper for my guild nights.
