I'm very happy with leftovers for 2-3 days, and/or transforming what's left into different things. Hubby was always soup/casserole tolerant and liked having the big all you could eat pot -- but he is fussier now with his ketovore/extremely low carb eating. I can usually make a base that I then add my small amount of rice or pasta or whatever in a separate dish. When I do cook the large amounts of brisket or pork roasts, we typically keep out 2-3 days worth, and freeze 2-3 days worth.
Tonight is hubby's bowling night and he won't have a lot of time home. We had some steaks we bought on Saturday we were going to freeze but that didn't happen, so 3 of them are marinating to become Carne Asada, and the other two are marinating to become more Asian inspired, think non-sweet (keto friendly) teriyaki. Teriyaki steak I will grill today with the grill hot and all that but they will be for tomorrow. Is leftover steak still a leftover??
We also have some Italian Sausages from Costco. I cut up some marked down peppers and an onion, and have that ready. can go with the Italian sausage or sort of fajita style with the Carne Aasada.
