finger foods
At many meetings there are snacks and/or finger foods. Due to health and allergies, I can't have sweets and cheese. So I try to provide something savory. And often provide it with gluten free option.
Here's one I did today;
Humas with ___________________
Mediterranian Humas
Chopped cucumber, tomatoes, chives (chop, salt and drain)
Dried basil (fresh would be better but it's not in season)
Mix and let refrigerate 6-20 hours. Serve with sliced Bagette.
Here's one I plan for "hold on your lap-no tables"
8 oz creme cheese softened
1 pkg spring vege soup mix
Chopped radish or water chestnut
1 6oz pkg frozen chop spinach, thaw and squeezed
1/2 cup chopped green onion or chives
Chopped red bell pepper
approx 8 oz chopped cooked meat (think I'll use sureme-fake crab)
Mix together
Spread on large soft tortillas. Roll. Refrigerate. When firm slice into rounds.
