My dh doesn't like meatloaf . . . or at least he didn't until I found this recipe. I also have a 3 and 5 year olds that love this meal.
Note: Because my family is not very large, I make the meatloaf mixture, freeze half for another quick meal – adding 1/2 recipe of sauce just before putting it in the oven. This changes the meal to serve 4. Hope you give it a try!
Little Meat Loaves
1 pound lean ground beef or ground turkey
1 pound ground pork or sausage (I use Jimmy Dean reduced fat)
2 eggs, beaten
¾ cup crushed buttery round crackers
½ cup milk
½ cup grated parmesan cheese
½ cup chopped onion
1 teaspoon Worcestershire sauce
1 teaspoon dried Italian seasoning
1 teaspoon garlic salt
Sauce:
1 cup ketchup
½ cup packed brown sugar
1 teaspoon liquid smoke (found in BBQ aisle in small bottle)
1 tablespoon Worcestershire sauce
Preheat to 350 degrees.
In a large bowl, combine the eggs, cracker crumbs, milk, cheese, onion, Worcestershire sauce, Italian seasoning, garlic salt, ground beef/turkey and ground sausage. Mix together well and scoop into 24 muffin pan.
In a small bowl, combine the sauce. Mix well and spoon sauce over each muffin/loaf.
Bake at 350 degrees for 30 to 35 minutes. Makes 8 servings.
(If muffin pans are not available, form into 8 individual loaves. Place loaves in a 9x13 inch baking dish. Bake for 45 - 60 minutes.)
