a good meat thats quick is take a brisket and lay in a crockpot fat side up and put a tablespoon or two of mustard.( I don't measure just squirt.lol ) then sprinkle a package of onion soup mix on top and cook for 8 hours on low.( Do not add water!) Remove the brisket and take the fat layer off and throw away and then you can make gravy with broth or use it to dip a hot brisket sandwich in to. Very easy and taste great! It freezes well also.
