Don't peel the beets, boil them like you would a potato. Let cool, remove skin, slice and put into a bottle of pickle juice, let sit a couple of days. Great for salads, or just eating.
Or, boil the beets, peel, slice, sprinkle with lemon juice and eat hot.
Or you can make soup out of them.
