My husband and I follow a very low sodium diet, and much to our surprise, we don't miss the salt at all (okay, maybe a little in some things...:lol: ). But here's a recipe we've used many times, taken from this great low sodium cookbook:

Slow-Cooker Chicken Cacciatore

1 large onion, sliced
6 chicken thighs
6 ozs no-salt added tomato paste
1/4 tsp black pepper
1/2 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1/4 cup dry white wine
1/4 cup water

Place onion in bottom of slow cooker. Place chicken on top. Combine the rest of the ingredients and pour over. Cook on low for 8 to 10 hours.

This is so easy and tastes as good as it smells! In fact, I have it in my crockpot today, which is my "inspiration" for posting.
