Meatloaf Cordon Bleu---Love this!
Preheat your oven to 350. Mix up 1 lb. ground beef as you would for your regular meatloaf. Then place the mixture on a piece of heavy duty aluminum foil (about 18" long), and flatten into rectangle about 1/4"-1/2" thick. Leave about 3"-4" of the foil exposed all around. Place a layer of thin sliced ham on top to about 1/2" from the edge of the meat, then a layer of thin sliced swiss cheese on top of that. Roll up jelly roll fashion and seal the edge and the ends well. Enclose this in the foil tightly and place in baking pan with sides, (not a cookie sheet). Cook about 1 hour. Remove from oven leaving the foil closed and let stand approx. 15 min so cheese doesn't run out when you open it.
After cooling, remove carefully from foil (grease will accumulate in the bottom) ( I use 2 spatulas to remove it). Place on serving plate and cut slices about 1/2" thick.
While meatloaf is cooking, make a brown gravy, and when you serve the slices, put a bit of gravy over it. Enjoy!
