There is new way of paper piecing now where you don't have to rip all the paper off. You don't actually sew through to the paper. There are courses and tutorials but can't find them right now. That is a beautiful quilt and i LOVE paper piecing!!
I have seen one demo, where you fold the paper back and stitch along the edge of it....could that be what you are thinking???
