All you need to do is brown the hamburger and oniion and start seasoning packets & opening cans and dumping! Save time by browning hamburger and onions together on a day when you have time and then freeze in recipe-size batches.
Linda’s Taco Soup
2 pounds lean ground beef (or less)
1 large onion, chopped
1 (4-oz.) can chopped green chilies, undrained
3 (14-oz.) cans tomatoes
1 (1 oz.) package Ranch dressing mix
1 (1.25-oz.) envelope taco seasoning mix
1 (15-oz.) can kidney beans, undrained
1 (15-oz.) can pinto beans, undrained
1 1/2 cups water
1 (14.5-oz.) can corn, undrained
1 teaspoon salt, optional
1/2 teaspoon black pepper
Brown the onion and ground beef. Drain well. Add all the rest of the ingredients. Stir well and bring to a boil. Simmer for 30 minutes or longer. Serve with cornbread or tortilla chips. It tastes even better the second day.
Note: I regularly replace the ground beef with ground turkey. Some or all of the tomatoes may be exchanged with Ro-Tel or other “hot” tomatoes for more kick. For the beans, I frequently substitute black beans, chili beans, or whatever kind I have on hand. Any way you do it, it is delicious.
