Eggplant Fritters


Peel and slice one eggplant. Steam until
tender and drain. Mash and beat until smooth.

Add
1 beaten egg
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon baking powder.

Form into patties and fry in deep, hot fat.
