I haven't tried Excel, but use Publisher to do some designing, especially paper piecing designs. Advantage of Publisher is that you can reduce/enlarge the design to the size you want.
I love LucyintheSky's idea of using fabric swatches from websites to see how they go together! How clever is that?
You could also take photos of fabrics already on hand and upload to the computer to use for designing.
