Ok, fold the towel in half so you have a short fat rectangle not a long skinny one, and sew a gathering stitch across the crease. Draw it up to match the size of the center fold of the potholder. Stitch your gathering to the center crease of the potholder. Does this help?

I just watched the video, and the only change I would make is, I would hand gather the towel since I tend to break machine gathering stitches on cotton and on toweling it would be impossible for me. Also, if you put a small piece of tissue paper over the toweling and under the pressed foot, you will not catch threads on the pressed foot. Have fun!
