I've been up to my eye balls with canning and I have three flats of tomatoes on the kitchen table waiting for me today. These are being turned into veggie soup. I've made three batches of spaghetti sauce so far with hopes of a few more.
Peaches come on Friday (4 bushels) I've froze and canned beans and I'm waiting for the corn. I think corn is the hardest but most loved by my family.

We won't go hungry this winter. I'm living out Proverbs 6!

Consider her ways and be wise,
She provides her supplies in the summer,
And gathers her food in the harvest.

It's nice to know canning is NOT dieing here in America.

I've never attempted to can anything other than jam. Usually strawberry, but this year I just made raspberry (freezer) jam. Mmm. Every summer we enjoy fresh salsa. I am interested in canning salsa. If anyone would care to share their recipe, I would appreciate it. :)

I freeze tomatoes all summer long since we get so many from our garden, then I use them to make marinara sauce that both my daughter and I use to make spaghetti sauce.

I did 28 jars of various jams, strawberry, cranberries from last year, raspberries too. Yes, last week, applesauce and pears. I have froze 15 dozen of corn on the cob.
My apples are just about ripe so I'll have that and tomatoes to do.
I may end up purchasing them.

I no longer have a garden but I did make some jelly the other day from a gallon of grape juice from my good friend in NC. When I took my GDs home I brought it back frozen. I always get to bring home great stuff from there.

I have done apricots, peaches, pickles and am continually doing tomatoes. I have searched for a good recipe for tomato salsa but haven't found one. Would yoiu share yours, please?

I was gifted with 10 gallons of pears.
I made 12 1/2 pints of preserves, 12 hot packed, and froze the rest. Then a made a table runner called Fresh Pears for the person who gave them to me.
Was such a blessing.
