i only like meatloaf if I make it, or someone close to me I know makes it. I never, ever eat it out at as I have no idea what they've put in it, shudder. Actually meatloaf sounds pretty good at the moment with this nice cool crisp fall weather, have to make one this week for sure. Thanks for the idea!

Lyn, I know exactly what you mean...I never order meatloaf out. My hubby and daughter do, but I'm a much pickier eater than they are. Never know what's in it.
Once my daughter order chicken and dumplings and it was the most disgusting meal I have ever seen. She tried to eat it but it was bright yellow...don't know if that was food coloring or what !!! I still almost gag to think of it. YUCKO Only eat my mom's c & dumplings and she is 95. Mine never turned out like hers. She's a wonderful cook but I guess those days are over now. Such a shame, too. The end of my cooking days will not be mourned by many.LOL....I try...I really do just too many good cooks in my family and I could never quite live up to their cooking.

I love meat loaf, but I use turkey instead of beef. Next time I'm going to cook mine in the muffin tins.

With harvest in full swing, and me working 32 hours/week, my crockpot gets a workout. The last 2 evenings the guys had beef stew and chili....don't know what I'll surprise them with Monday night!

My DH's grandmother was from Lithuania, don't remember her meatloaf but she did make some great foods but no recipes handed down to family. Do you have any that you can share? I found some online but they were really gross, one said begin with 10 lbs. of boiled potatoes!

Here's the recipe:

1 pound ground beef (I use 90% lean)
1 1/4 teaspoons salt

1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard


Preheat oven to 375 degrees F.
Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Call me when it comes out of the oven!
