Having 3 members here from another board.One is from Australia,,her first trip to United States! They wanted coconut cream,so hubby was up early rolling out dough..LOL!

4 egg whites,room temp,1/4 cup sugar, a pinch of salt...beat them on high adding sugar slowly until they are very stiff.Be sure the meringue seals up against the sides of the crust. If your meringue bleeds it is because it wasnt whipped stiff enough. A glass bowl works best.

OMG, I Looovvveee coconut cream, I will send you my address so you can send my order out, LOL, I keep trying to cut a slice, but my knife must be dull. That looks so delicious and my mouth is watering. Hubby did a great job, bless his baking heart.

Would you be willing to part with the coconut pie receipe?? I have never made on and don't have a receipe, yours seems tried and true. Thank you

Oh darn...looking at that beautiful pie makes me want to whip up my mother's old receipe for Lemon condensed milk pie!! Half the time, i can't get that icing effect though...hmmm, maybe a tute on this?? LOL
