Sounds like everyone had a busy weekend. Thought i'd share my newest "find" for a good low points dinner recipe - for those who like a little bit of spice.
1 box Tony Chachere's Creole Red Beans & Rice dinner - old WW points - 8 points for the whole box
2 x 4 oz chicken breast - cut into 1 inch pieces - 4 points each old points
1 teasp olive oil - 1 point old points
Chef Paul Prudhomme's Magic Seasoning blend - Poultry Magic.
* Prepare red beans and rice per package instructions
* When red beans/rice is almost done - season chicken breast pieces with Poulty magic and brown in olive oil - cooking til done. Combine the chicken and the red beans/rice. A spoon of low fat sour cream goes well with it.
I combine this with a salad - and this give DH and i dinner for less than $7 AND the old WW total points is total 17 --- so only 8 1/2 points each !!
I haven't tried it yet, but i think turkey smoked sausage browned would also taste good in place of the chicken breast.

Penni that sounds good. I will have to make some of that. We are still getting tons of produce from the garden. My DH and I just picked about 1 gallon of raspberries. Also picked about 50 tomatoes and you can't even tell we picked the tomatoes. I will take them to quilt guild tomorrow night. We also have tons of green beans. The garden has gone crazy this year.
I made shish ka bobs for dinner last night. I had the leftovers for lunch and there is still enough for tomorrow. I am babysitting my SIL dog for 2 weeks. He is the sweetest dog, except I'm not sure he knows he is a dog. At his house he sleeps every morning until 7 or 7:30. He has been getting up at 3:30 and barking. I take him potty and tell him to go back to bed and he does. Makes it really hard to get out of bed in the morning.

Oh Yum !!!! i'm originally from Pittsburgh PA and this time of year was fried red tomatoes and corn on the cob as our supper -- and tomato and lettuce sandwiches for lunch --- all fresh from the garden. Boy do i miss that !!! Will you be canning tomatoes???

Today is the first anniversary of the death of my father. It is also my Mother in law's birthday. Yes, he died on her birthday.
I drove down to Mom's Friday afternoon. She's about 100 miles south of us (with Los Angeles in the middle) We went and laid flowers on his grave. I polished up the headstone (it had some tire tracks on it across the picture) My two older daughters and four grands made it too. It was really hard to get the grandbabies to not dance on his grave. They are 3, 2 1/2 and 19 mos. They thought is was fun to dance on it after I cleaned it off. They have to idea. My mom didn't see them on it.
Saturday my girls and the 3 toddlers went to the lake with mom, Dh and I went over to his mom's house taking the baby with us. Then they all came over to him mom's as well as my DD#3 and DD#2's DH (they drove down together) My sil and her dh and son and his girlfriend all came up from San Diego and we cooked her dinner and had a couple of cakes and sang happy birthday.
I called my mom today and she spent some more time at the cemetery. She's feeling kinda sad and lonely.
Of course I ate too much both Friday night and Saturday and also ate a piece of Carrot cake. I was a bad girl.
We drove back Sat evening cause my husband, a pastor, works on Sundays.
I still need to get my FQ out. I was feeling kinda dizzy today. I felt I was listing to the right when I was walking around. I ended up staying home and wasting time playing on the computer. Got in a little sewing. but was bad and did not get the FQ in the mail

Pat, I wish I had some of your fresh produce!
Gayle, it sounds like you had a hectic weekend. Don't beat yourself up about the food. Just get back at eating right, get some activity in and you will be golden.
I had a very busy weekend that started friday afternoon and ended about 8:30 tonight. I drove 100+ miles, went to a painting class, stayed in a hotel, walked a 5K, went to a sculpture garden, drove 100 miles, had my mom and 2 sisters at my house overnight, entertained, fed everyone, drove 100+ miles to take my sister home, went to IKEA, and drove 100 miles home. I got home at 8:30 tonight and have been sitting on the couch watching tv. LOL It was a great weekend but I am exhausted! Now this week I am babysitting 5 out of the next 6 days. No rest for the wicked!

Pat, wish I lived near you to help you with your fresh produce, my husband used to plant but he's gone so no fresh garden products for me for the last 6 years.

I have canned tons of tomatoes. 50 qts of juice, 50 pints of whole tomatoes. Tons of dried tomatoes. Also 15 quarts of salsa. 40 pints of green beans. 55 jars of raspberry jam. I think we have about 5 gallons of frozen raspberries. We also have a lot of peppers. We are begging for someone to pick the raspberries. Hopefully someone from my guild is coming tomorrow. Also lots of corn.
I have been keeping track of everything I eat this week. Hopefully I will be down when I weigh in on Saturday. Next Saturday I am going to a Jenny Doan trunk show. There is also a quilt show. I can't wait. Hopefully I can control myself and not buy too much fabric.
