Traditional Easter Dinner or something else?

At my house, holiday dinners are pretty much set in stone. It only took one time where the menu changed and a few people weren't happy. My mother decided she wanted duck! Since then, on Easter, we alway's have a honey baked, spiral sliced ham with mashed potatoes, greens or green beans, deviled eggs, rolls and a couple desserts. Any additions are fine, but don't even think about deleting any of these items. If I feel adventurous, I might add fried corn this year. :p

What are you having?

Maureen 04-04-2012 12:49 PM

We are pretty traditional
Ham, scalloped potatoes, green bean casserole, corn, rolls, pineapple and cherries on a toothpick surrounding the ham and for dessert Hawaiian cake or something with coconut on it.

raedar63 04-04-2012 01:05 PM

I have to work BOOOOOOO, my mom is so disapointed easter has always been her very favorite holiday and she likes to go all out . Traditional as well as anythig new is welcome !

mltquilt 04-04-2012 01:08 PM

We live in Texas so we are having beef brisket (SIL does the cooking of this), baked beans, green beans, probably some grilled veggies because 19 yo GD asked for them, rolls, tea. We will also have potato salad. Oldest daughter can make it now just like mine, which was just like my mom's. I always make banana pudding for dessert and am adding homemade chocolate cheese cake this year. Used do the ham every year, but we do that now at Christmas.

We have been having ham alot. Just Husband and me. We are having roast beef this year, cooked w/potatoes and carrots, haven't decided what else yet.
We go to Sis in laws on Sat. her Mom and She will come up with something. Brother in law died almost 2 years ago.
We all gather there, kids do their own thing on Easter Sunday. Sis in law is a vegetaritian (sp). She usually has meat for everyone. I and my Daughter make desserts.

redkimba 04-04-2012 01:24 PM

I'm not sure what my step-mom has in mind, but this year we will smoke a salmon side. We generally have ham.

Well, this year a friend and I will be in Asheville! My husband will stay behind.
If you are feeling adventerous, try this recipe; Deviled eggs: Boil the eggs, of course. To the cooked yolks, add a little salt, garlic powder, dill, mayo (not too much you don't want them too wet) a little dab of grey poupon AND finely chopped dill pickles! (I use Clausen's because it's the only one I can eat.) This recipe came about when I had to change the "regular" recipe because of allergies. It is really fantastic! I do like the fried corn thought.
Happy Easter to all.

SouthPStitches 04-04-2012 02:16 PM

What is fried corn?

Tartan 04-04-2012 03:02 PM

We usually had spiral sliced ham also. We now have an addition in our family that can't have pork products so we are having mixed green salad, lasagna and Skor Blondies for dessert. I just tried the Skor Blondies ths week and they are delicious. The recipe is on the package of Skor baking bits right now but I left out the Choc. Chips.

BellaBoo 04-04-2012 03:10 PM

I don't have the same foods for holidays. Usually a turkey for Thanksgiving when the kids were at home but never started a traditional meal menu. This Easter DH will probably grill salmon and shrimp for dinner. I have a dozen hand painted eggs that I always have on my table for Easter. That is our only Easter tradition.

decky 04-04-2012 04:25 PM

We are going to my sons for Easter dinner and are having tenderloin steak on the grill, I have to bring my cheesy potatoes and dessert which will be an angel food cake with crushed pineapple/pudding in layers of the cake.

BMP 04-04-2012 04:47 PM

I changed my menu a bit this year, Au Gratin potatoes, spiral ham, baked beans, coleslaw, corn, Eclair cake and Peanutbutter pie.....we are having dinner Sat afternoon, my son always volunteers to work double shifts on holidays so guys who have little ones can have the day off.....I always have to plan our holidays around his schedule. We have even had to hold Christmas a day or two after 12/25 !!!

It's fresh corn cooked/fried in a skillet. I don't know why it's called fried, my mother always used a regular pot. There's a ton of variations out there. Excuse me...I think I'm drooling.

Crqltr 04-04-2012 05:36 PM

My kids will be leaving for home Easter morning..so for dinner time I will be having peace and quiet! We will be having the baskets, egg hunt, ect. Early so the little ones will be all wound up on sugar then I can just pile them in the car and send them home to deal with it!

COYOTEMAGIC 04-04-2012 06:08 PM

Usually ham with pineapple and cherries, 'tater salad, deviled eggs, but ya'll got me thinking of augrauts or cheesy 'taters Hmmmm

marymm 04-04-2012 08:21 PM

Ham, fruit salad, asparagus, herbed rolls, usually potato salad and/or baked beans. Always a cake shaped like a bunny or a bundt cake with a chocolate bunny tucked into a nest of green coconut in and center and cut-out decorated cookies. Back in the old days when we met at my grandparents, the Easter egg hunt always involved dozens of kids in a pasture with the cows removed and hundreds of real eggs. The food was copious, including not only ham, but also turkey and chicken and dressing and my mom and all the aunts brought the most scrumptious pies and other desserts.

Oh, I forgot the bunny salad. Half a canned pear on a bed of lettuce, scoop of cottage cheese for the tail, another pair half slice in 2 for ears, raisin eyes, cherry nose.

I also make "Peep" salad

Basicly it's ambrosia. fruit & marshmellow Peeps, no coconut, bleah!

The only bad part is the eyes of the Peeps staring back from their multilated marshmello bodies

Hmm, wonder what fast food places will be open on Sunday??? LOL One son's family is going out of town to in-laws and the other son will probably be working! I don't have a DH or "significant other" to cook for so I'll probably stay in jammies all day and watch movies...and eat jelly beans and maybe a Cadbury egg!!

JanTx 04-04-2012 09:31 PM

We're spending the weekend together. On Saturday night we'll be at my mother's, but I'll do the cooking - herb crusted pork tenderloin, roasted asparagus, some kind of other veggies, salad - my daughter's family currently doesn't eat carbs. My grandsons will make Easter nest cookies - chow mein noodles, butterscotch chips, little candy eggs in the "nest". (Pooey on the no-carb group for dessert!) On Sunday after church we'll go to that daughter's for brunch - she'll do brunchy things but promises dessert/coffee later in the afternoon which will be "positively evil". Hope so!

slk350 04-04-2012 09:37 PM

Hi Twisted, Your Easter dinner sounds like mine, except I make Easter sweet breads (braids with sugar glaze), also. You live very close, I'll join YOU for dinner...LOL

arklissa27 04-04-2012 10:06 PM

hello everyone............I just love that all the thing in dinner.......maybe we can make a small batch of the salad when you return and they both lost. called "salad" so that if he ate for dinner we
say, "Oh, I just had a salad for dinner." If you're still not convinced that
propose the inclusion of mini marshmallows ... not yet? well, we can add ground beef.

Sandygirl 04-05-2012 03:39 AM

Cracker Barrell for us. Not tied to tradition!

sweetana3 04-05-2012 04:12 AM

We are going to our local high end Mexican restaurant and having an Easter buffet. You choose the entree and have a big buffet of appetizers and desserts. Yummy.

Patski-Mi. 04-05-2012 04:17 AM

Our Easter brunch consists of platters loaded with hard boiled eggs, ham, kielbaska, and home made custard cheese. This is a tradition that has been passed down thru the years. I'm 67 and have been going to my grandparents house since I was born. My grandchildren looked forward to going there every year even if they don't like what's on the menu. Of course there are all the goodies and Easter breads plus an egg hunt for everyone.

buslady 04-05-2012 04:30 AM

I like that idea. So much for the diet!!

We will have ham and turkey.. as some do not like ham.. so it will be cheesy taters and mashed. All the entire fixings.. I love to cook huge meals for holidays and for huge crowds... the bigger the better.

Wow, stay home, wear jammies, watch movies, eat jelly beans and chocolate, mmm, add popcorn! Sounds great to me! What a deal, I may propose this plan to my DH and see if we can't just do this. Thanks.

We are having a cookout. Thanksgiving is the meal that's set in stone around here. Christmas and Easter are flexible.

If I was cooking dinner this year it probably be green salad, spiral ham, sweet potatoes, green veggies, pineapple casserole, rolls and later coffee/tea and dessert. My sister invited DH and I this year and I hope there will be more than her, her DH, DD and us as her menu is huge. First course - macaroni (we don't call it pasta) with fresh tomato sauce, meat balls and sausage and Italian bread from the nearby bakery, next spiral ham, veggies and maybe a small leg of lamb or pork tenderloin. I'm bringing a bean salad to have with thin slices of Italian bread before the macaroni, pineapple casserole to go with the ham, home made anise biscotti for the coffee and a bottle of wine.

All this after we've had DH's B-day lunch yesterday with DGranddaughter Catherine, we'll be having an early dinner with DS Pat Saturday, Easter dinner at my sisters, then lunch with DGranddaughter Mary next week (lives in CA and will be visiting family here), lunch with best friend Mary, lunch with good friend Elaine for her B-day, and ending with Granny's Lunch with my Granny cousins. Here I'm trying to keep my food intake simple and light because DGranddaugther Christine's wedding is beginning of June and I want my outfit to still fit me.

Do you make Paula Deen's Pineapple Casserole? I just love it. The first time I made it my son turned up his nose when he heard the ingredients, but I talked him into trying it. He ate half the pan.

I have a turkey that I bought at Christmas (BOGO). So I will cook that. My oldest son will come, and perhaps my sister and brother-in-law if they get back from the Viva Las Vegas Car Show in time. My youngest son and his wife are returning Saturday from a week long trip back East so they will probably want to just stay home in their pj's all day.

MrsM 04-05-2012 07:23 AM

Our plans are up in the air because of a family crisis. This is the first year we wont be celebrating Easter with a meal together. I actually will be working on Easter Sunday. It feels so odd and unreal. I will be keeping Easter in my heart though. Happy Easter to you all and God bless you and your families.

QKO 04-05-2012 07:24 AM

We're probably having our traditional Nevada Easter Brunch -- i.e. whatever they have on the Easter Brunch menu at the local casino. :)

Not sure whose recipe it is, found it in cookbook with recipes from co workers. Don't have recipe handy right now but main ingredinets are a large can of crushed pineapple with juice, several eggs and about 5 slices of bread. Goes nicely with ham and could also be eaten as a dessert. May in Jersey

With 3 people on medical imposed diets, our menu cannot include salt, potassium, wheat, gluten, diary products and must be low glycemic. I have no idea what to serve.

Happy Easter to all.

I looooove dill pickles in deviled eggs too plus minced onion instead of garlic salt.

Ruby the Quilter 04-05-2012 01:37 PM

One of the holiday dishes I fix is stuffed dill pickles. One of those things that most people turn up their noses but when the try them they love them. Take a large dill pickle and to make it easy cut it in thirds, core out the seeds and stuff with a stick of velveeta cheese. Slice and chill before serving. My grandmother made them when I was little - probably when Velveeta cheese was first introduced.
