Cincinnati Chili can be an acquired taste. It is a bit different than "Texas-style" chili.

1 cake mix, yellow
4 large eggs
3/4 cups vegetable oil
1 cup mandarin oranges with juice (11 oz can)
1 teaspoon vanilla extract
1 pudding mix, instant vanilla (5 oz)
1/2 cup powdered sugar
114-oz. cn pineapple crushed and juice
1 whipped topping, prepared, nine ounces


Beat cake mix, eggs, oil and using juice from oranges; add vanilla. Add oranges; beat until pieces are small-- about 3 minutes. Bake in greased, floured 9x13 inch pan. 350 degrees-25 to 30 minutes.

Topping: Blend pineapple juice with the pudding mix. Add powdered sugar and Cool Whip. Blend well, and add drained pineapple. Blend well. Spread on cake and refrigerate.

Why pig licking cake? Because people make pigs of themselves!

Looks like a windy,raw day in Ohio....so it's Zuppa Toscana soup with salad for us.

You can get it at Olive Garden, but it's easy to make at home.

Here you go

Zuppa Toscana Soup from Olive Garden.....serves 4-6

1 lb Italian sausage (I like mild sausage)
2 large unpeeled russet baking potatoes, scrubbed,sliced in half,and then in 1/4 inch slices
1 large onion, chopped
1/2 can oscar meyer bacon bit or 4 slices of bacon,cooked & drained.
2 cloves garlic, minced
2 cups kale or 2 cups swiss chard, chopped
2 cans chicken broth
1 quart water
1 cup heavy whipping cream

Directions:
Prep Time: 20 mins
Total Time: 1 1/2 hrs
1 Cook sausage in a 300°F oven for approximately 30 minutes.
2 Drain sausages on paper towels and cut into slices.
3 Place onions, potatoes, chicken broth, water, garlic in pot, and cook on medium heat until potatoes are done.
4 Add sausage and bacon.
5 Salt and pepper to taste.
6 Simmer for another 10 minutes.
7 Turn to low heat.
8 Add kale and cream.
9 Heat through and serve.

My changes are to remove sausage from casing & brown in skillet,breaking meat apart & chop very fine,then drain well.I use more chicken broth, no water & canned evaporated milk in place of whipping cream.You can sub fresh spinach for greens.

The OG serves with fresh grated parmesan cheese.

I think tonight's menu will feature soup and salad -- maybe cream of potato or mushroom barley. I'm kinda leaning toward the mushroom barley so I can use up some leftovers. :wink:

DH & I headed out the door for a walk and it was raining so we decided to take advantage of having to be inside and made the cabbage rolls together. He loves to cook and it's his Dad's recipe. The secret is V-8 juice.

Thank you, plainpat for the Zuppa Toscana recipe. I'll make it this week. I already made Jan in Va's Chicken Tortilla soup, which she so kindly shared with us, and it was SUPER GOOD.

I love.love cabbage rolls! For the Toscana recipe, I won't use the bacon....doesn't add to flavor.DH was surprised that he did like the soup.A bit of fine diced pimento or red pepper sprinkled on top when served adds color.I used 3 cans of ch broth & nearly 1 can of evaporated milk.Used mild italian sausage....3 links & added black pepper.

Oh, and as far as what I decided to make for dinner tonight I went with the mushroom barley soup and salad. I'll have the cream of potato another time. The soup is almost finished, and boy does it smell yummy!!! :D

Oh, those cabbage rolls were yummy. Wish I could have shared them with all of you. Made enough to freeze a couple more dinners worth.

Funny....you're way across the country & we just had our dessert, strawberries over vanilla ice cream.1st berries for us & soooo good! Hope yours are too.

Well, yesterday's mushroom barley soup was dee-lish!!!! Tonight we are having cheeseburgers and oven-baked fries. My sweetie makes yummy burgers!! :thumbup:

Left over soup & ham sandwiches today.I'll try the mushrm barley when DD comes to visit in 3 wks.She doesn't eat red meat.We all love soup.

Tonight's menu features Swiss steak made in the crockpot and will be accompanied by carrots and mashed potatoes! Boy, but that Swiss steak is smelling so yummy!!! :D :thumbup:

We had creamed turkey,using meat I'd picked off the bone & froze.Baked sweet potatoes & green salad.All tasted good,we were hungry.

took 3 leftover boneless,skinless chicken breasts.cut them into bite size pieces tossed them in a fry pan with a tiny bit of oil,then tossed in frozen mixed vegetables,let them fry for a little while then added the leftover chicken Rice-a-Roni,continued frying and tossing it all up,then took 2 eggs scrambed them up and tossed them into the pan also and mixed them up unitl the eggs were cooked,my leftover chicken fried rice.Pretty darn good

Last night I baked chicken with salsa poured over it on top of the wood stove. Also had green beans from the freezer (out of the garden last summer) and angel hair pasta sauted with a little olive oil, garlic, onions and mushrooms.

Every meal sounds better than the last :) Today it's sauteed ocean perch,oven fries & cole slaw.Strawberry shortcake for dessert.
