Chili and rice leftover from last night's dinner., green salad and I'll make some cornbread to go with it, cornbread will also be good for tomorrow's breakfast

Spaghetti sauce is simmering on the stove, water in the pot for the noodles, mushrooms are ready to fry.... and salad is in the bag (ha ha - I will throw in some cucumber and sprinkle with craisins) and the dressing will be balsamic vinegar and olive oil.

Tomorrow will be popcorn or something like that :D

Christmas Omaha steaks here tonight as well. Potatoes are on the grill and some carrots I think.

Wednesday night is usually chicken night. DH picks it up after work. Sometimes sides sometimes not. Either way I make sure I have sides to go with. Last night for dessert though I cut up some strawberries and bananas and pineapple and drizzled some lime juice and chili powder over the top. Refreshing!

I just discovered Collard Greens and so I made them with sauted garlic, and white beans with a little sweet red pepper over tiny penne'.

So easy, one pan supper.

I use a soup pot and cook the pasta first and dump into colander.

In the same pot add some olive oil and toss in some chopped garlic and sweet red pepper and any amount of rough chopped collard greens you want and a little salt and let it sweat down a little. Cut out the big veins in the leaves before you chop them.

When the greens are almost cooked to your liking add the (canned) rinsed white beans.

Cook until beans are hot. Taste and add salt & pepper and some ground nutmeg, just a little and taste again and again until you like the flavor.

Dump the pasta back into the pot and stir. Re-season to your liking.

Pan seared flounder with a side of steamed pea pods. Boring I know, but DH and I are back on Atkins. :( For my desert, 1/2 cup of sugar free red jello and for DH a few cubes of cheddar cheese. Decaf ice tea to drink. Blach....
