Sounds good! I had thought about not doing a pumpkin pie for Thanksgiving this year (the only time I normally make them), was going to do pumpkin bread instead, but now you've got me thinking I could do a pie.... though I'm thinking one of those two-layer ones where the other layer is cheesecake.

I'll just have to get my craving for pumpkin bread out of the way this week or next. <G>

I've been eating a ton of turkey lately, too. (Do you have Wawa up by you? They have this turkey dinner sandwich or bowl with the sutffing, mashed potatoes and cranberry sauce all in together, and I've had that twice, plus made turkey chili and am planning on some turkey meatloaf, too.) I have to stop so I won't be sick of it come T'Day.

Tonight's dinner (yes, very late), however, will be a sort of chicken parmesan with spaghetti and spinach salad. (Going overboard on the spinach, lately, too - spinach quiche is coming up tomorrow.)

Yummmm pumpkin pie is my favorite. I made Pecan Pie for the first time last year, and was amazed at how stinkin easy it was. Gave myself a V-8 smack for not trying it earlier!

After they are baked and cooled, can you freeze them?

My husband is the pie maker in the family. He does pumpkin & pecan at Thanksgiving & Christmas- Yum! One less thing I have to do, too!

we are having friends over for Tday - pies galore will be on the menu .. I am going to make the popcorn cake, and an a pie of some sorts .. one of the friends is bring over a sugar free pumpkin pie, sugar free apple pie (as she and my DH are both diabetics), I asked everyone to make small pies so she is making the pies in muffin tins, as we just don't need all those yummy left overs !LOL This way everyone can take some of the pies and have a special treat after TDay and remember our time together !
