Question about Hand Sewing Please
I am making some small pet beds for kittens for a rescue, and I sewed them on a machine but after I stuff them they have a small section that I have to close by hand so it will look good. If I hand stitch close together with polyester thread...the beds are fleece....do I need to worry about hand stitching not being strong enough? I do know how to do it (really don't enjoy it) but most of all worry that in general is hand stitching considered strong?

I think it should be fine. Your only other option would be to pinch the edges together and sew a very narrow seam to hold the edges together. I've done it both ways.
Alternatively, you could close the opening with a decorative stitch and continue that around the entire perimeter of the pet bed... just a suggestion, as I cannot say more without seeing the bed..
In any event, I think the rescue will be thrilled to get the beds!

I seldom do hand stitching and use the machine instead to stitch openings.
Leave the seam allowance in the opening to 1/2 inch on both pieces. Fold the half inch seam line and iron. Use a piece of steam a seam to close the two edges and then stitch down the opening on the machine.
If you don’t want seam a seam in the pet bed, just pin the closure to hold. Then stitch closed on the machine.

If you are worried about your hand sewn closures not being strong enough, try using a backstitch. That's a very strong stitch and would hold the seam shut.
